Wooden cutting boards made of solid wood such as oak or walnut are durable and particularly gentle on knife blades. Wooden cutting boards have natural antibacterial properties and can serve you well for years with regular care such as oiling. Wooden cutting boards are very sustainable and provide a pleasant cutting feeling. Plastic boards are light, inexpensive and dishwasher safe, but they can blunt knife blades much more quickly. Deep cuts are difficult to clean and have no antibacterial effect. Plastic cutting boards are also not a sustainable raw material. Glass boards are hygienic and easy to clean, but very hard on knives. In addition, glass cutting boards can break very quickly. At first glance, bamboo is a sustainable alternative to wood, but it consists to a large extent of synthetic resin glue to keep the bamboo in shape.

How do I clean a wooden cutting board?

First of all, a wooden cutting board should be cleaned with as little water as possible and as much as necessary. Wood and water can only mix to a certain extent, especially if the wood is not to work too hard, crack or deform. Nevertheless, the correct cleaning of a wooden cutting board is crucial for hygiene and longevity. After use, the cutting board should be rinsed with lukewarm water. If you are only cutting some bread on it, you can do without water altogether - read the first sentence again - but avoid aggressive cleaning agents. These damage the surface, which was created by several sanding and oiling processes. After each wash, you should dry the cutting board thoroughly and let it air dry completely on both sides before putting it back in a drawer. Very important, always wash the cutting board on both sides so that it does not warp and work on one side. If you like to prepare raw meat or fish on the wooden cutting board, you should use a little washing-up liquid when cleaning. 

To be able to use your cutting board over a long period of time, an occasional Care recommended. Every intensive rinsing causes an attack on the wood surface. A fine sandpaper (240k) and a food-safe Linseed oil varnish are perfect for caring for cutting boards. Of course, you should not put your wooden cutting board in the dishwasher. We also do not recommend placing it on its short sides. Dripping water can cause waterlogging and the glue joints could open up. It is better to always place it on its long side, where there are no glue joints, just solid wood. 

Why a wooden cutting board and not a plastic cutting board?

The main advantages of a wooden cutting board over a plastic one are:

  • Sustainability: Wood is a renewable raw material that has no negative environmental impact even after use. 
  • Antibacterial: The natural tannins in the wood kill germs and prevent them from multiplying. 
  • Protects the knife: Compared to plastic, wood protects the blade of high-quality knives. It is hard, but still soft enough. 
  • Abrasion: The abrasion from the wooden cutting board is wood. With plastic cutting boards, microplastics end up in the dish. 
Plastic cutting boards have one main advantage. They are cheaper, but they also wear out much faster and have a much shorter lifespan. 

Which cutting board do the professionals use?

However, if you often prepare very liquid foods, such as tomatoes or steaks, a juice groove can be useful to keep the moisture on the cutting board. In most cases, buyers opt for the visual background and, as we know, this is always individual. A tip: if you want a juice groove, then go for it without feet. That way you have one side with a groove and one without. 

What is the highest quality cutting board?
